Another quick after work dinner, this time using leftovers. I’m not a big “leftover” fan, with few exceptions. Meatballs and pasta sauce being one of those exceptions.
I made another batch of the Pork, Garlic and Basil Meatballs. on Friday night and we had them over spaghetti. Last night the leftover meatballs became meatball sandwiches. I cut a homemade baguette into buns, filled with meatballs and topped with fried onions and peppers.
These sandwiches remind us both of the Meatball sandwiches we got at a little place on Mount Pleasant Avenue in Toronto back in the 7o’s.

That's such a great idea to use up leftover meatballs and sauce. Now I just need to work on shaping baguettes properly so I can make these myself 🙂
