This is a great dinner for a work night.
Easy to put together and quick to cook.
Each component of this dinner was cooked on the grill.
The chicken breasts were pounded out “slightly” and seasoned with fresh garlic, salt, pepper, the juice of a lemon and a little olive oil. Then set a side for 20 minutes while the vegetables cooked.
The peppers and green beans were drizzled with olive oil and minced garlic.
The potatoes went on the grill first. Brushed with oil and garlic and seasoned with salt and pepper.
Cooked over low heat, turned a couple of times, they took about 15 minutes.
The peppers were placed directly on the grill, over another burner set to medium.
And the green beans were cooked on a grill pan.
(so they wouldn’t fall through the grids)
When the vegetables were almost ready, the chicken went on the grill over medium high heat.
Boneless chicken breasts cook quickly, depending on thickness.
I can taste every bite..peppers on the grill are one of my faves..Great meal Ann.The potatoes are so cute.
I need to turn the grill on more often, that's for sure.
