We started the evening with Mumm Champagne.
This is the wine that we served at our wedding 32 years ago and we have continued the tradition.
First course was a Tex-Mex Prawn and Avocado Cocktail.
This was so good that it ended up being our main course.
Very simple. Kind of like a Tex-Mex Gazpacho.
I made my regular salsa: Tomatoes, white onion, jalapeno pepper, garlic, cilantro, salt and fresh lime juice pulsed in the blender. The difference for this dish was I diluted the salsa with a little chicken broth making it more like a thick soup. Added the cooked prawns ( roasted using Ina Garten’s method) and cubed avocado.
Our main course was suppose to be a beautiful little Prime Rib that I purchased from one of the best butchers on Vancouver Island. (Orr’s Family Butchers) But we knew we wouldn’t do it justice last night so it will be tonight’s dinner.
Should be even better – it was presalted on Wednesday, and then seasoned it with garlic, mixed peppercorns, fresh rosemary and a drizzle of olive oil.
Ready for the grill.
