Nothing is better than fresh halibut. The only fish that I can say that I really truly love. I could eat it two or three times a week and not complain.
There are a number of ways that I like to serve it but none is better or easier than simply pan roasting and then serving with a browned butter and herb sauce.
You don’t really need a recipe, – just brown the presentation side of the fillet (skin side up) in a cast iron pan, turn over and finish in a very hot oven for 5 to 10 minutes depending on the thickness of the fish. Heat the butter in a small skillet until it starts to brown (be careful not to burn), add minced garlic, parsley and fresh dill and squeeze in the juice of a fresh lemon, give the pan a shake and pour over the halibut.
