Slender Sweet Potatoes
Olive oil
Salt and Pepper

Place sweet potatoes in a pot and cover with water. Bring to a
boil and simmer until
potatoes are tender.

Remove from pot let cool or just run under cold water and peel.

Slice into scallop size pieces, approx. 1″ thick.

While potatoes are cooking, heat oil and butter in a skillet and
add sliced onions.
Cook until caramelized.

When ready to serve, heat oil and butter in a skillet and sear
Sweet Potato scallops until well browned.
Plate and spoon caramelized onions over each scallop. Season with
salt and pepper.

NOTE: Would be a great prepared ahead side dish. Just reheat in
oven before serving.

Would be a wonderful side dish with ust about any meat,

Pork, Chicken, Turkey, Beef, lamb, etc…..
