Anniversay Dinner

Yesterday, Moe and I celebrated our 33rd wedding anniversary.
Since it was a work day for me, dinner had to be something  easy to put together.
We started with something new and finished with an old favourite.
The Roasted Tomato Caprese salad as shared by
was a big hit.   
I don’t know if I will ever make a traditional Caprese salad again.
The tomato is wrapped in procuitto, drizzled with olive oil and roasted. 
The combination of the proscuitto and warm sweet tomato is exquisite and the fresh mozzarella just takes this salad to a  another level. 
And the tomatoes were from our own garden.
Our main course was beef tenderloin fillets in a green peppercorn cream sauce served with Parisienne potatoes and fresh steamed and buttered green beans.
