I had a small pork roast that I wanted to slow roast and use in Pork Tacos. BUT it was just to hot to turn on the oven so I cut the roast up into cubes and made Pork Chili Verde. Rather than make tacos I used it in my favourite layered dish – Mexican Layered Supreme. I used store bought flour tortillas to make chips. Just cut the tortillas into wedges or strips and deep fry for a minute or two.
