Grilled Pork Chops


Have I mentioned that I love summer? We tend to have very mild or moderate summers here on the west coast. I’m so enjoying the weather the last couple of days. The temperature has been in the mid to high 80’s and today it might have actually reached 90°F. And, it is suppose to continue for a few more days. Perfect weather for grilling.

I presalted two thick bone in pork chops yesterday and then today I rubbed them with fresh garlic, black pepper, chipotle pepper and the juice from a lime. Served with buttered basmati rice and asparagus topped with fresh grated Parmesan.
