Favourite Meatballs

I love these meatballs. Made from pork and seasoned with garlic and fresh basil. Last week when we were having dinner with Clif and Barb, I made a double batch of meatballs. They were rolled in fresh breadcrumbs and fried.   Half became dinner and the other half  went into the freezer. I had nothing planned…

Blackberry Cobbler with a Vanilla Cream Sauce

On our way home from our walk the other day, we passed a blackberry patch that was loaded with beautiful ripe berries.   Unfortunately, we hadn’t come prepared with a pail or a bowl so we had to improvise.    We used a baseball cap.  It held enough to make a cobbler with enough leftover for…

Breakfast – Eggplant

I still had half of an eggplant left from dinner. So, it became breakfast.  Soaked in milk and then dipped in seasoned flour,   fried and drizzled with an Asian style chili sauce and served with scrambled eggs.

Eggplant, Tomato and Pesto Puff Pastry Tarts

I was reminded of this recipe when I saw a recent post on  Mari’s Once Upon A Plate for another puff pastry tart. It has been a while since I made this appetizer. Puff Pastry topped with eggplant, sliced tomato and pesto sauce. Makes a wonderful first course.  PRINT RECIPE Eggplant, Tomato and Pesto Puff…

Canadian Living’s Blueberry Upside Down Cake.

(As shared on Bakers Stock) I love this time of year. So many fresh fruits and vegetables  are now available at our local farmer’s markets. One of my favourite fruits, and something I look forward to each year is  blueberries. What better way to use the first blueberries of the season than in a cake…
