Pork Tenderloin Schnitzel.
Schnitzel is easy to make and is just as good made with boneless chicken breasts or veal cutlets.
You don’t really need a recipe.
Just season the meat with a little garlic.
I rub a garlic clove on a microplane and then rub the garlic paste over the meat.
Dredge in seasoned flour (salt and pepper) and then into beaten egg
and finally coat with bread crumbs.
My preference is fresh grated bread crumbs.
I think the flavour and the texture is much better with fresh bread crumbs.
Optional: I like to add fresh grated Parmesan to the bread crumbs.
Heat oil in a skillet or electric frying pan. You want enough oil so that the schnitzel “floats”. Cook until meat is done, turning once. Drain on paper towels and keep warm in low oven.
Served with fried onions, potatoes
and a squirt of lemon.
