BROCCOLI AND CHEDDAR QUICHE

I don’t make quiche very often. Just every few years.

I got home from work around 6:00 last night, later than usual and then I got the bright idea to bake a quiche.

I quickly made my all butter pastry and got it into the fridge while I made the filling.

I don’t really have a recipe for quiche.

So I started by chopping up an onion and sauteeing in a little olive oil and butter. Then added the broccoli that I cut into small pieces. Add a tiny bit of water and covered so the broccoli cooked quicker. You don’t want the broccoli to be over cooked.

While the broccoli cooked, I mixed up four eggs with heavy cream and a little milk about 1 cup of cream and half cup of milk, added one cup of shredded old cheddar, salt and pepper. Add about 1/2 cup of chopped green onion. Just the green part. Chives would work too.

Rolled out the dough and placed into the pie pie. Made sure that all the water had evaporated from the broccoli before adding it to the pie crust. Spread the broccoli and onions over the bottom of the crust. Poured the cream and cheese mixture over the broccoli land baked at 375 for about 45 minutes.

Pie came out of the oven at 7:30 and after it rested for 30 minutes and we both had a slice for a late dinner.
