Continuation of Low Salt Diet

All of our meals for most of the last month have been low salt.

It really is an eye opener when you start really paying attention to the amount

of salt one eats.

Our recent meals since my last post in no particular order:

Halibut pan roasted and finished in the oven.

Served over rappini with roasted potatoes and a little beurre blanc sauce.

Low sodium stir fry with pork and green beans.

Made Moe poached eggs for breakfast.

Grilled chicken breast with a side of Linguine in a tomato basil cream sauce.

One morning I made Moe a tomato soup using tomatoes from our garden.

Served with toast.

First roast chicken dinner since we started the low salt diet.

Really missed the salt in the mashed potatoes and the gravy.

Moe is having an easier time adapting to this new way of life.

Used the leftover chicken breast to make our favourite diner food – a hot chicken sandwich with fries and canned peas.

Fresh halibut poached in my Cioppino broth served over rice noodles.

Used tomatoes from our garden.

Moe wanted an omelette for breakfast.

In order to get flavour into the omelette without salt, I made him one topped with shredded cheese, fried potatoes, and a fresh salsa with tomatoes from our garden, jalapeno pepper, onion, garlic and cilantro.

He enjoyed it enough that he didn’t need any added salt.
