NEW LOW SALT DIET

Moe had blood work done recently that indicated some kidney issues.

SO…… About 10 days ago we went on a reduced sodium diet.

I couldn’t find any salt substitute that I found acceptable.

So had to settle for Mrs. Dash’s Garlic and Herb.

Not great but would do until the order I placed with

Hot Mamas Spices and rubs.

Hot Mamas is a Canadian Company out of Orillia Ontario that

produces a line of gourmet pepper jellies, sauces, rubs and spices.

The majority of them Salt Free, Gluten Free and MSG free.

My first order was for their spice seasonings,

I order five of their spices and they were kind enough

to send me a bonus spice.

The following meals were all no salt or very little salt and some seasoned

using the Mrs. Dash’s garlic and herb salt free spice mix.

Monday September 11th

I spatcocked this small chicken and instead of presalting like I normally would,

I seasoned it with the Mrs. Dash Garlic and herb seasoning

and left it in the fridge overnight.

The chicken was done on the grill at 5:00 AM.

Made garlic rice to serve with it.

It was Moe’s breakfast and I was working that day so I took the same for lunch.

Tuesday September 12th

We had skipped lunch so I made an early dinner.

Eating while watching our Blue Jays game.

Penne Alla Vodka with grilled chicken.

Wednesday September 13th

Moe’s Breakfast.

Open faced omelette with sautéed cherry tomatoes and zucchini, seasoned with garlic and basil.

And just a little bit of Mrs. Dash Garlic and Herb seasoning.

When we lived in Toronto, we would often stop at a Jamaican restaurant for Jerk and roti.

There is a Trinidad restaurant in Victoria that Matt likes the potato/vegetable roti from.

If I’m down there and it is on a day that they are open for lunch I will often pick him up a Roti.

I decided that I would make curried potato roti for dinner.

I basically winged the potato curry taking ideas from a number of different recipes. And I made the Roti using a recipe from the cookbook “Eat with Us” by Phillip Lago. These are made similar to the way the Chinese Scallion Pancakes are made. So they are very flaky.

They were a big hit.

But didn’t photograph well.

Friday September 15th

Pan fried Halibut finished in the oven with roasted potatoes and fresh green beans.

The halibut was seasoned with pepper and a tiny pinch of salt, and served with lemon.

The roasted potatoes were seasoned with the Mrs. Dash’s.

We had grilled chicken souvlaki on homemade pitas for dinner night one night.

Also made tzatziki sauce. With a glass of Sangria.

The chicken was seasoned with fresh garlic, pepper,

dried oregano from our garden, fresh squeezed lemon

Monday September 18th

Started a levain with just a little pinch of yeast Sunday morning and the dough

was made that night and left out on the counter over night.

Ready to go at 4:00 AM this morning.

Baked 6 baguettes.

I would normally add 30g of salt to a 1000g of flour. I reduced the salt in this batch to 20g.

Monday September 18th

I had some ripe pears to do something with. So I poached them.

This was actually our dinner.

We weren’t that hungry so had dessert for dinner.

Poached Pears with Vanilla ice cream with a homemade caramel sauce.

This was suppose to be salted caramel sauce but it was made with unsalted butter and no

additional salt.

  2. Yes, I like the Silk Road Spice Merchants. I’ve ordered from them a number of times. And there is another Canadian company that I order from in Nelson, BC – Organic Matters.
