Walnut Lemon Loaves

 I shelled some more walnuts  this morning and made Walnut Lemon Loaves.
The original recipe comes from Better Home and Gardens. 
  
Rather than one large loaf I made eight mini loaves.
I drizzled the loaves with a glaze made from butter, powdered sugar, vanilla and lemon juice.
I love the combinations of vanilla and lemon.
 

Walnut Lemon Loaves

(with a few minor adjustments)

1-3/4 cups all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon baking soda (if using Yogurt or sour cream)
1/4 teaspoon salt

1 beaten egg
1 cup  milk (half Milk half Yogurt or sour cream)
1/4 melted butter
2 teaspoons vanilla
1-2 tablespoons lemon juice
2 teaspoons finely grated lemon peel
3/4  cup chopped walnuts – toasted

Preheat oven to 350°F
Butter/grease Loaf Pan(s).  I also line with parchment leaving  a little overhanging.  Makes it easy to lift the loaves out without having to tip upside down.

Mix dry ingredients together.

Beat egg into melted butter, add milk (and yogurt/sour cream if using), vanilla, lemon juice together.  Add to dry ingredients.  Mix ,just enough to combined.  Do not over mix.  Add walnuts and spoon into prepared loaf pans.

Will make one large loaf , or a number of smaller loaves.

Glaze

1 to 2 tablespoons soft butter
I cup powdered sugar
teaspoon vanilla
Juice from half a lemon (more if needed to thin glaze)

Mix together and drizzle over loaves while still warm.

My changes are in RED.
