I think I like Pork better than Beef. Especially in meatballs and meat sauces. In the past I would use a combination of the two. But lately, more often than not I use just pork.
The other night I made a sauce using just lean ground pork. This was a quick sauce, taking less than an hour to simmer. So very do able on a work night. And served over spaghetti. I used fresh tomatoes, but canned would have worked just as well. I also used both dried basil and fresh basil. The fresh gets added at the end, just before serving.
Pork Meat Sauce with Tomatoes and Basil
PRINT RECIPE
1 small onion chopped
2 to 3 garlic cloves
2 cups coarsely chopped tomatoes
1 cup of chicken broth
Dried basil
Fresh rosemary
Fresh basil
Brown ground pork in a little olive oil.
Add the chopped onion and minced garlic.
Saute until onions are tender. Add the chopped tomatoes, dried basil,
rosemary, red chili flakes (if using) and chicken broth. Season with salt and Pepper , cover and
simmer for 45 minutes.
Just before serving add the chopped basil.
Serve over your favourite pasta shape.
