Seared Scallops………….

over pasta.
On the way home from work I made a detour down through Cow Bay  stopping at  Cowichan Bay Seafood to  pick up something for dinner.
Since we had just had halibut a few days ago I went with fresh scallops.

Scallops are not my favourite but Moe loves them.
Dinner was one of those very easy, quick to put together meals.
It took longer for the water to come to a boil than it did to cook dinner.
When the pasta was almost done, the scallops were seared in a very hot cast iron skillet
in a little butter and olive oil.

The pasta was drained, put back into the pot with a couple of tablespoons of butter,
a minced garlic clove, the juice of a whole lemon, chopped chives
a thinly sliced hot red chili pepper.
Seasoned with salt and pepper, plated and topped with the scallops.

  1. Living in the interior of BC in the Okanagan we are lucky to get the freshest seafood possible thanks to the sustainable fisher\”woman\” who trucks in crab, spot prawns and anything else she can catch.

  4. Scallops happen to be one of our favorites and you've cooked them perfectly. When you mentioned boiling the water took longer than it did to cook dinner, it reminded me of a little book called (I think) How to cook French food in 10 minutes. He said to start a pot of water to boil the minute you walk in the door. LOLSam

  5. Your bread photos are wonderful. I am baking french baguettes right now and I found your photo on FoodGawker. Thank you for such beautiful looking bread loaves!
