I made an Asparagus, Tomato and Chive Frittata. Steamed the asparagus first. Mixed up 6 eggs with a little cream, salt, pepper, chopped tomato, chives and a handful of mozzarella cheese. Would have preferred cheddar but didn’t have any on hand. Started the frittata on top of the stove and finished it off in a 375°F oven. Served with toasted French bread.
