Canada celebrates our Thanksgiving the 2nd Monday in October.

Didn’t want to cook a turkey or a ham and have to deal with all of the leftovers, so I went with a Cornish Game Hen.

I boned it, leaving just the legs and wings

and stuffed with a wild rice and mushroom stuffing.

Served with roasted butternut squash, green beans and steamed radishes
