More Sourdough

Monday was one of those days when we were staying put.
It had been snowing since Sunday and wasn’t stopping any time soon.
So Monday became another Sourdough bake day.
I fed the starter again Sunday night and made a biga.
Because I have enough bread in the freezer, I’ve decided to make some fun breads today.
I roasted two bulbs of garlic for a couple of  Roasted Garlic and Cheddar baguettes, and
pitted  Kalamata olives for a Olive and Parmesan Boule.
This is what the Biga looked like Monday morning.
 Really active.
Added it to a 1000g batch of dough.
Baked one large round with the Kalamata  Olives
and two baguettes with roasted garlic and a combination
of old cheddar and smoked Gouda.
Roasted Garlic with both cheddar and smoked Gouda.
Makes the best toast.
