Dinner off the Grill

Summer finally came to Vancouver Island. 
The temperature finally jumped 
from 18°C  (65°F) to 28°C (82°F).
 
I worked yesterday and got home just before 5:30.
 
 
I had a Prime Rib  ready (presalted)  to cook for dinner, 
but I didn’t want to turn on the oven.
So,   I decided  I would cook the roast and the rest of the dinner on the grill.
 
The roast went on the grill first.
 
The zucchini, red peppers, potato slices and green beans 
were tossed with olive oil, minced garlic, salt and pepper.
 
The potato was cut with a “Crinkle Cutter”.
 
The potato slices and red pepper strips were cooked right on the grill.  
 
 
I was afraid green beans would fall through the grid 
so they were cooked, along with the zucchini, on a grill pan.
If we can believe the weather man 
we can expect continuing warm weather for the 
next couple of weeks – so we will probably 
have a few more dinners off the grill.

    What a great looking meal – the beef is perfect for me. We've been using our grill as an oven for the same reason, except summer showed up here in April.

    After finding your Gorgonzola Bread recipe on pinterest and loving it last night, I had to browse the rest of your blog! I'm enjoying the recipes and have already pinned a few.But I had to comment on this particular entry because it is just too funny that you are from Vancouver Island. As I mentioned in the bread post, we live in Buffalo, but I am originally from the Seattle area and spent a lot of time in Victoria and around the island. Not many people move across North America and we kind of did a flip flop! Hope you love the area!

  4. Joy, We have moved across country twice. We are originally from Toronto. Moved out to Vancouver and then in 1999 we moved back east to Dunkirk, NY. Loved living in that area. My favourite grocery store was Wegmans. From Dunkirk, I had a choice of going into Buffalo, Jamestown or Erie, PA to shop at Wegmans. And we could be in Toronto in three hours. We moved back out west in 2001 and settled on the Island. We love it out here. Especially love the mild winters.~Ann
