Boneless Stuffed Chicken Breasts

Winter came back for the day on Wednesday, dropping about eight inches of snow.
The perfect day for staying in and playing in the kitchen.

  

I boned out a whole (double) chicken breast and stuffed it with my regular sage bread stuffing.   
  Since I had no intentions of going out I made do with what I had on hand.

Mashed potatoes and gravy, 

 

rutabaga and buttered peas. 

Comfort food at its best.

    I really like being able to \”make do\” with what is on hand. Sorry to hear you got another load of snow. We are actually seeing signs of spring. My daffodils started blooming this week and the temps are much more pleasant.Becky
