Tex-Mex Leftovers – Layered Supreme

As I have mentioned many times before, I’m not big on leftovers.  But there are a few exceptions.   When I made the Pork Chile Verde earlier this week I deliberately made enough so that we could have this Tex Mex Layered Dip.  One of my favourites.  It can be served as an appetizer, but I like it as a main course.  

 Layers of black beans, pork chile verde, cheese, sour cream, salsa, guacamole, chopped tomatoes and black olives.
Served with fried flour tortillas wedges.
I also made Moe a breakfast using the leftover homemade flour tortillas and salsa.   Warmed the tortilla in the microwave to soften.  Topped with fried potatoes, green onions, bacon, cheese, scrambled eggs and 

finished with homemade salsa.
