I love lazy mornings. Started out with coffee at 6:00 AM and finally got around to making breakfast around 9:30. Mushroom, Cheddar and Chive Omelettes with fried potatoes. I used 6 year old white Cheddar and the chives were from the garden.

Yummmm, omelet. We have them at least once a month. Always a winner. Love all the ingredients in this, and I have chive growing in my yard. Perfect!
