Chicken Souvlaki and Greek Salad. A family favourite.

Promised Moe an Antipasto platter for dinner one night last week.  Grilled the mushrooms, zucchini, peppers and eggplant before leaving for work. Roasted the little cherry tomatoes after I got home. I wanted them still warm to put on top of the grilled Brie. Served with a lovely dry Prosecco.

Greek Chicken Butterflied boneless chicken breasts.  Seasoned with fresh minced garlic, salt, pepper, oregano,  fresh squeezed lemon juice and olive oil. Cooked on the grill and served with a Greek Salad Salsa,  baked potato and green beans that were also cooked on the grill.

Moe is training for the BC 55+ Seniors games  which takes place in September. He will be competing in the 100m, 200m and 400m races. He decided that he would  prefer to eat  more chicken as his protein.  Works for me – I love chicken. So many ways to prepare it.   For variety we have also…
