Really enjoying having a selection of fish in the freezer to choose from.

We also had homemade fish and chips this week.

Using more of the LingCod.

The batter is a light crispy “Tempura” batter.

Tempura Batter

1/2 flour
1/2 cup cornstarch
1 teaspoon baking powder
Soda water or beer or a combination.

Set aside a few tablespoons of flour mixture.

Mix dry ingredients together.
Using a whisk, add the soda water/beer. Enough to make
a thin batter.

Dip fish in the flour mixture that was set aside, then into batter.
Let some of the batter drip off before frying in hot oil (350°F.).
