Moe likes bran cereal so I have started to make him bran muffins. A favourite is Honey Bran Muffins.
I found a photo of a chocolate cake made from All-Bran, baked in the microwave. Unfortunately it was a diet version which I wasn’t looking for. But I liked the general idea, so I made a non diet version.
ALL-Bran Microwave Chocolate Cake
100 g All bran cereal
6 fl oz boiling water
2 large eggs
2 tablespoons cocoa powder
1/4 cup white sugar
1/4 cup brown sugar
pinch of salt
Options. Orange zest, raisins, dried cranberries, etc.
Pour boiling water over bran, stir and let sit for a few minutes
for bran to
soak up water and soften.
Add the sugars, salt, cocoa powder, stir well. Add the eggs and
vanilla, mix well and
spoon into six small silcone cupcake/muffin cups.
Place on a plate, and microwave for 2 to 3 minutes until fully
set. Remove and let cool
slightly before popping out. Could also use a small silcone cake
pan. Will take 5 to 6 minutes on high.
If using dried fruits, add them to the bran when adding the
boiling water so that they have a chance
to soften up.
