I make very good salads.
I just do not get any satisfaction out of eating a salad.
including a salad photo – lunch at the Soho South Cafe.
Stopped on the way home from work and picked up the ingredients.
A Google search brought up the Soho South Cafe’s menu and a description of the salad.
Seemed simple enough.
I made my own “Boursin Cheese”
basically a mixture of cream cheese, butter, garlic, black pepper and herbs.
I toasted buttered slices of Baguette to make the croutons.
Tossed mixed Greens, with slices of Pacific Rose Apples, Toasted Walnuts, Tomatoes, Artichoke Hearts and Chopped Green onions with a vinaigrette (Garlic, Salt, Pepper, Balsamic Vinegar and olive oil).
Topped with a grilled boneless chicken breasts seasoned with garlic, salt and pepper, a squeeze of fresh lemon juice.
Moe loved his dinner.
Everything about it including the croutons with home Boursin.

This salad has me almost salivating! It looks wonderful, and has me thinking this might be part of my dinner tomorrow night. My daughter would love it. Not sure about my son and the daughter's boyfriend tho 😦
Now that's a salad I could just love.
I worked at a restaurant where a lady would come in and order salads with just lettuce, artichoke hearts, and dressing. None of us employees had heard of putting artichoke heart in salads but it became the break time snack of choice! I never would have thought of apples with artichoke hearts but this sounds great- especially with that vinaigrette.
Ann – I too have never been a salad fan which has my friends (who are) scratching their heads. However, after my trip to Italy last year and sampling some amazing hearty salads like the one you have here, has changed my mind. Somewhat. LOL I'll be trying this one for sure!

What a beautiful salad. Definitely making this very soon. I'm the big salad eater here and husband just wants a small amount. I think he will like this one. Still enjoying my cutting boards and knife rack. So happy with all.
I'm a member of your club. I love a salad, but I call that \”practice\”. Salads usually don't satisfy me. My husband, on the other hand, would go crazy for this one. So would I. love the combo of protein, greens, tomatoes, apples and cheese. It's beautiful.
