This is one of my most repeated meals.
An easy dinner to put together quickly on a work night.
The fish is dipped in seasoned flour, beaten egg and rolled in fresh grated bread crumbs that are seasoned with parmesan and lemon zest.
Since I had grounded up more bread crumbs than needed for the fish, I sauted butter with a little minced garlic, added the breadcrumbs and tossed them in the butter garlic mixture and then toasted them over low heat until the bread crumbs turned golden. Stirred in a little fresh ground parmesan and sprinkled the buttery crumbs over steamed broccoli.
Served with roasted potatoes.

Halibut is is the King of fish for me, beating out my beloved slamon.
Oh my, this is my favorite way to prepare halibut. I use the same technique with razor clams. Those wonderful toasted bread crumbs really dressed up the broccoli.
I love good breaded fish and adding parmesan is bonus!!
