I hope you will participate with Lori (All That Splatters) and I in this weeks’s Weekend Blog Showcase.
Homemade Rice-A-Roni
2 tablespoons butter
1 cup long grain rice
1/2 cup vermicelli or
spaghetti noodles, broken into 1/2 inch pieces
2 cups chicken stock or more as needed
1/2 small onion chopped
1 minced garlic clove
chopped chives
chopped parsley
Melt butter in skillet. Add the broken up pasta and saute until noodles are brown. Do not Burn.
Add the onion and garlic, saute for a minute or two. Add the rice and toss to coat. Add enough broth to cover rice and be about 1/2 inch over the top. Cover and simmer on low until rice is tender and all the liquid as evaporated.
Remove from heat, cover rice with paper towels, put the lid back on and leave to rest for 5 to 10 minutes. Remove lid and fluff with a fork.
To participate in Weekend Blog Showcase, pick a recipe from a blog other than your own (Tastespotting and Foodgawker are great places for inspiration), make the recipe and post about it on your own blog, crediting the originating blog with the recipe. Then sign into Mr. Linky. Add the Weekend Blog Showcase Logo to your post and if you feel like it leave a comment here. That’s all there is to it! Lori and I look forward to your participation

I have to admit… I loved rice a roni as a kid but haven't had it in years because of the msg in the mix… thanks for the recipe… I can't wait to give it a try!
Oooo. Rice o Roni! I haven't had this since I was a child, and I had completely forgotten about it. I love that you made a homemade version. Thank you for posting this recipe. I bet my son would love it!
This looks like a delicious alternative to my usual side dishes. I used to make the boxed version when my children were young. I know they will enjoy the homemade one.
This looks so good and delicious……I love your photo's. I'll be making this for sure as my DD loves anything with rice and this looks like a good side dish. Thanks for sharing and have a Merry Christmas!
A blast from the past! I used to love Rice-a-Roni, but haven't made it in years. I almost never use anything packaged now. Thanks for the recipe….I know my family will love it and they have no idea what Rice-a-Roni is! Happy Holidays, Ann!!
