Homemade Rice-A-Roni……………..Weekend Blog Showcase

Showcasing the blog – Chef Tess Bakeresse this week and her recipe for Homemade Rice-A-Roni.

I can’t remember the last time I ate Rice-A-Roni.  It wasn’t something that I made more than once or twice when Matt was young, because he didn’t care for it.

I was looking for a dish to serve as a side with the little rack of porkI was going to do on the grill the other night. 

Looked through Tastespotting and Google Images and found a few photos and recipes that looked and sounded appealing.
I made a few changes to the recipe, mostly minor.  You can find the original recipe here on Chef Tess Bakeresse.

Homemade Rice-A-Roni

2 tablespoons butter
1 cup long grain rice
1/2 cup vermicelli or
spaghetti noodles, broken into 1/2 inch pieces
2 cups chicken stock or more as needed
1/2 small onion chopped
1 minced garlic clove
chopped chives
chopped parsley

Melt butter in skillet.  Add the broken up pasta and saute until noodles are brown.  Do not Burn.

Add the onion and garlic, saute for a minute or two.  Add the rice and toss to coat.  Add enough broth to cover rice and be about 1/2 inch over the top.  Cover and simmer on low until rice is tender and all the liquid as evaporated.  

Remove from heat, cover rice with paper towels, put the lid back on and leave to rest for 5 to 10 minutes.  Remove lid and fluff with a fork.

  1. Gosh, your pork looks incredible, Ann…and the rice is a perfect side dish!My weekend blog showcase this week was a version of Starbucks' Cranberry Bliss Bars…I made two different recipes…both yummy!

    I have to admit… I loved rice a roni as a kid but haven't had it in years because of the msg in the mix… thanks for the recipe… I can't wait to give it a try!

    Oooo. Rice o Roni! I haven't had this since I was a child, and I had completely forgotten about it. I love that you made a homemade version. Thank you for posting this recipe. I bet my son would love it!

    This looks like a delicious alternative to my usual side dishes. I used to make the boxed version when my children were young. I know they will enjoy the homemade one.

    A blast from the past! I used to love Rice-a-Roni, but haven't made it in years. I almost never use anything packaged now. Thanks for the recipe….I know my family will love it and they have no idea what Rice-a-Roni is! Happy Holidays, Ann!!
