Pork Carnitas

Pork Carnitas 
Tacos with homemade corn tortillas.
A small pork roast
rubbed with garlic, salt, pepper and ground Chipotle Pepper
and slow roasted in a 275°F
oven until fall apart tender.
Leftovers became breakfast
 
Migas for Moe
Fried leftover corn tortillas cooked with onions, eggs and cheese
topped with salsa, avocado and cilantro.
and for me 
More Tacos
I fried the tortillas just enough to shape them, filled with pork, salsa, cilantro and fresh lime.
