Steelhead Salmon

On may way home from work tonight, 
I detoured down through Cowichan Bay 
so I could stop at my favourite seafood store  – Cowichan Bay Seafoods.
I had intended to pick up Halibut.  
 
But instead of Halibut I decided to try fresh caught Steelhead Salmon.
This is the first time I have cooked Steelhead and was pleasantly surprised.
Like a milder flavoured salmon.  
 
The fish was drizzled with a little olive oil, 
sprinkled with salt and pepper and a little dried basil 
and garnished with lemon slices. 
The potatoes were roasted in a 450°F oven and ten minutes before they were done, 
the fish went into the oven.
 That is all the time the fish needed.
  
Along with the roasted potatoes, the fish was served with 
sauteed zucchini seasoned with a little fresh garlic.

  1. I have to admit Ihave never had steelhead either, this needs to change of course.

    Great looking pan of food. I've been wanting to try steelhead either in a pan or the smoker. We can only get farm raised here so I've been reluctant to try it
