Been at least a month since I roasted a chicken.
This was Friday night’s dinner.
I took a chicken sandwich to work with me on Saturday and what was left of the chicken went into the stock pot.

I swear I could have this for dinner once a week. Its the gravy and mashed potatoes that really have me hooked, plus the thought of a chicken sandwich. Yummy!
I love it when it cools down enough to turn on the oven. Roast chicken is a wonderful meal….you have it all: chicken, mashed potatoes, gravy, string beans and leftovers!!
