Chewy Ginger Cookies with Crystallized (Candied) Ginger
3/4 cup of butter
1 cup of white sugar
1/4 cup of molasses
2-1/4 cups flour
1 teaspoon baking soda
1/4 teaspoon fresh grated nutmeg
2 teaspoons powdered ginger
3/4 teaspoon cinnamon
1/2 teaspoon salt
3/4 chopped crystallized ginger
Cream butter with sugar until light and fluffy.
Add egg and molasses and beat well.
Mix nutmeg, ginger, cinnamon, salt and baking soda into
flour. Add to butter mixture.
Stir in the crystallized ginger.
Form into 1 to 1 1/2″ balls.
Roll in sugar and place on parchment lined
Press small piece of ginger into top of cookie.
Bake at 350°F for about 8 minutes.
Don’t over bake if you want the
cookies to remain soft and chewy.
Cookies should look slightly under-cooked.
Move cookies to wire rack to cool.
