Mexican – Dinner and Breakfast

Homemade Tacos. 
This is a favourite dinner and one that can be made quickly even on a work night.
I stopped on my way to work on Sunday
and picked up boneless chicken breasts and fresh cilantro.

I had everything else needed to make the
tacos including the masa harina for the tortillas.
I needed salsa to marinate the chicken, so  I made the salsa first.
Next up was the corn tortillas.   
The grill was turned on to preheat, while the tortillas were being baked.
I have this wonderful insultated tortilla holder that keeps the tortillas hot for a long time,
so I always get them made first.
Next, the chicken breasts went on to the grill and were cooked in a matter of minutes.

Less than an hour from start to finish.

There were a few corn tortillas leftover that I used to make breakfast.

Chilaquiles

Cut into strips and quickly fried in oil.

Leftover salsa was heated in a skillet and the fried tortillas strips added.

Topped with scrambled egg, avocado, onions, cheese and cilantro.
