Moe loves oatmeal porridge

I haven’t made it for him since the weather turned warm. It was cool this morning so I put a pot of porridge on the back burner, and slow cooked it for his breakfast. He likes it creamy so I start it in cold water, with a pinch of salt, on very low heat. It needs to be stirred every five minutes or so and takes about 35 to 45 minutes to cook. Moe likes his topped with a little butter and brown sugar and milk. I tossed in a few blackberries.

I hate porridge , so I had oatmeal cookies. The kind with white chocolate in them. Warm out of the oven with a cup of coffee. What could be better.

We were both happy. Especially Moe since he also got to eat the cookies.

Best Oatmeal Cookies

1 cup butter
1 cup sugar
1/2 cup
packed brown sugar
1 egg
2 teaspoons vanilla
1 2/3 cup flour
3/4 teaspoon baking soda
1/8 teaspoon
baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
dash nutmeg
1 1/2 cups rolled oats

Preheat oven to 350. Line a cookie sheet with parchment paper.  Cream butter and sugars together until light and fluffy. Add egg and beat until smooth. Add vanilla. Combine flour, soda, baking powder, salt, cinnamon and nutmeg. Stir into butter mixture. Add rolled oats. Roll into small balls (golf ball size) and flatten with glass dipped in sugar. Bake 10 to 12 minutes or until bottoms are golden. Cookie should not get brown. Cool on wire rack.

Options: Add chopped Callebaut White chocolate and sprinkle with sea salt.
For a lacy – thinner buttery cookie, reduce the flour to 1 cup.  Cookies will spread more so be sure to space further apart.

  1. It would be a toss-up for me!! I love oatmeal for breakfast and oatmeal cookies for dessert! I've never put blackberries in my oatmeal before – that looks wonderful –

    I pick the cookies….I am another non porridge eater…my kids and M. love it…they say I make great oatmeal, but I will never know…I can not even stand to smell it…but oatmeal cookies…yeah baby!
