Braised Short Ribs

It was cool here the other day.
Felt more like an autumn day than a summer day.
 I had a craving for Braised Short Ribs.
Comfort Food!!
This is one of those “recipes” without  real measurements.
Actually I very seldom measure ingredients in this type of dish.
 The Short Ribs were cooked until the meat was tender and falling off the bones.
Served over polenta with Sauteed Rapini.
Here is a “basic outline”  type of Recipe.

Braised Short Ribs

Short Ribs
Olive oil
Salt and pepper
Shallots or Onion
Garlic cloves
Carrots
Celery
Rosemary
Bay leaf
Squirt of tomato paste
Beef broth
Red Wine

Heat Dutch Oven over medium high heat. Add Olive oil
Season short ribs with salt and pepper.
Brown short ribs turning to brown all sides.

Remove meat from pan and add chopped carrots, celery and shallots (or
onions).  Cook for a few minutes to soften.  Add minced garlic,
rosemary and bay leaf.  Add beef broth, tomato paste and red wine .
Note:  Meat is not totally covered in broth.  Just enough to braise the meat.
About 1 1/2  to 2 cups liquid depending on the size of pot.

Cover and place into a 275 to 300°F oven.  Cook until tender. Usually two to three hours.

Serve over polenta or with potatoes or rice.  Can also be served with
noodles or spaetzle.

    I've never cooked short ribs, but this may inspire me to try. I love polenta, and I'd make this dish just for the polenta and the sauce.
