Baked Omelettes

I had some fresh Chorizo sausage that I needed to do something with.  I remembered seeing a baked omelet on Ry’s Blog – Sotto Il Monte Vineyards that looked soooooo good and then flipping through an Italian cookbook –  Elodia Rigante’s Italian Immigrant Cooking  I found another baked omelet (Fritatta).

So I decided a baked omelet would be the perfect way to use what I had on hand.  While the sausages were cooking, I put on a pot of oil and fried up some potato slices.   I lined a couple of small “casseroles” with parchment paper and then layered in the potatoes and then the sliced sausage and a layer of grated white cheddar.  Mixed up the eggs with a little cream, adding chopped chives, seeded and chopped tomatoes and salt and pepper and poured over the sausage and potatoes.  Baked in a 375°F for about 15 minutes.

Served with buttered toast.  . 

 I found two of these little blue casseroles at “Winners” the Canadian version of  TJ Maxx.
