JANUARY 2024 – WEEK TWO

Monday January 8th

Baked a small Margherita Pizza for Moe and I to share. 

Dough had been in the fridge

since Friday (Jan.5th)

Moe wanted something sweet so I made him an Apple Kuchen. What is nice about this cake is that as long as you have all the ingredients, it takes no time to bake and can be eaten warm.

Served with a vanilla cream sauce.

This sauce is so good.

I made it recently to go with the Raspberry Cobbler.

Tuesday January 9th

I had a small turkey in the freezer that I defrosted overnight and roasted for dinner.

Homemade dressing, baked separately.

Served with all the traditional sides that we like. Mashed potatoes and gravy,

rutabaga, green beans and the dressing.

Wednesday January 10th

Breakfast is served. I grilled Burgers and made Fries.

I had recorded last night’s Raptors Laker’s game and we watched it at 3:00 AM this morning.

They kept showing Burger King ads which gave us both a craving

for burgers.

Thursday January 11th

Made a pot of soup, using the turkey broth made from the carcass.

Moe had soup and toasted baguette for breakfast.

It is recommended to eat more fish and chicken for the low sodium diet.

And beef and pork less often.

I’m trying to add more fish to our diet.

It is easy to add it for Moe, because he likes most fish, but I on the other hand only really like halibut. Especially when it is in season.

Thankfully it does have a long season and should be back in the fish counter in March.

In the meantime I’m trying other fresh fish to see it there are any that I don’t actually dislike.

Last week we had Atlantic Salmon, which we both enjoyed.

So I’ll buy that again.

Yesterday I bought two different pieces of fish for last night’s dinner.

Both fresh. Icelandic Cod and Steelhead.

Moe really liked the Cod, which had beautiful big moist white flakes,

and I was happy with the Steelhead.

Moist with a very mild flavour.

Salmon coloured by flavour closer to trout.

Both were pan seared and finished in the oven,

drizzled with lemon, garlic butter and served with roasted potatoes and steamed broccoli.

Friday January 12th

Weather wasn’t great today. So stayed in all day.

Dinner was a simple pasta.

Bucatini Cacio e Pepe.

Saturday January 13th

Today’s bake.

Dough started with a Pate Fermentee Thursday and went into the fridge until last night at 8:00 and was baked early this morning before 6:30AM.

Sunday January 14th

Another bake day.

Neither of us was hungry last night so skipped dinner.

    Thank you so much for the tip of using Canadian flour. As much as I tried, I could never get my pizza dough to turn out as well or “holey” as yours. My husband and I made a trip up to Victoria (we’re from the greater Seattle area) last month to see the Christmas lights. I had my grocery list in hand in search for Silver Star flour, but could not find it. I did purchase Rogers flour, which I seem to recall was your second choice? Once home, I followed your directions again but using the Rogers flour and the difference was night and day. My husband said it was the best pizza I had ever made! In one of your previous posts, you mentioned a local to you flour shop. What was the name of it, please? I’ll put it on my “next time we’re on Vancouver Island list”.

  3. Hi Cynthia. I’m so happy that you tried Roger’s flour. The Silver Star is also a Roger’s flour, one of their commercial flours. It is only available at Costco. There is a Costco in Victoria (Langford area) and that is where I buy it. The Roger’s sold in all of our grocery stores, is very close to the Silver Star, both with high protein. What is nice about the Silver Star is I can buy it in 20 kilo (44 lb) bags and the price is $21.00. So great value. The local flour shop is a bakery in Cowichan Bay, called True Grain. They sell their own stone ground organic flours. I buy their Organic whole wheat rye to feed my sourdough starter with. If you are in Victoria, Cowichan Bay is less than an hour up island.     Thank you Ann for sharing this additional information! I know where Costco is in Victoria. I’ve bookmarked this page and will go to both Costco for the Silver Star flour and also take a little drive up to Cowichan Bay to True Grain. I’m not sure when we will get up there again, but we usually try to make it there about twice a year for a little getaway. Thank you again for your generosity in sharing. I’ve learnt so much from you about bread making and pizza dough. Your blog is a great resource.
