HOMESTYLE WHITE BREAD

This style of bread reminds me of the loaves of bread my grandmother always made.

Makes wonderful dinner rolls too.

Normally I make this by hand using the Autolyze Stretch and Fold

Method. But decided since I was going to be making two – 1000g flour batches

I decided to do in the Electrolux Magic Mill.

It doesn’t get used much since I found the Stretch and Fold method about

Home Style/Farm Style White Bread

Makes two large loaves or a number of smaller loaves.

1000g flour

300g milk (heated just to take the chill off)

400g water
85 g melted butter

1 to 2 tablespoons honey

7g yeast

27g salt

Place flour, yeast, salt in bowl of mixer. Add the water/milk

honey and melted butter. Mix well and let sit for 20 to 30 minutes (autolyze rest)

and then turn the machine back on and finish kneading.

Place in a buttered container, covered and leave on counter until at least doubled.

Shape into two loaves. Place in buttered loaf pans.

Cover with plastic wrap or a tea towel.

When the dough has proofed, place in a preheated oven (375°F)

and bake for 30 minutes

or until bread is golden brown and the internal temperature is 200°F.

(Optional: Rub crust with butter while still warm for a softer crust).
